COOKIE DOUGH CHEESECAKE
Crust:
? 1 & 1/2 c graham cracker crumbs
? 5 tbl unsalted butter (melted)
? 2/3 c mini semisweet chocolate chips
Cookie Dough:
? 5 tbl unsalted butter (room temp)
? 1/3 c light brown sugar
? 3 tbl sugar
? 1/8 tsp salt
? 1 tsp vanilla extract
? 3/4 c all-purpose flour
? 1 c semisweet chocolate chips
Filling:
? 10 oz. cream cheese, (room temp)
? 1/4 c granulated sugar
? 1 large egg, (room temp)
? 1 tsp vanilla extract
DIRECTIONS
Crust:
Preheat oven to 325?. Grease a 9?-square baking pan. Line said pan with parchment paper, leaving enough to extend over the sides. Grease the parchment paper. Mix together graham cracker crumbs, butter, and chocolate chips until crumbs are coated and soft. Press crust mixture into bottom of pan and sides. Bake for six minutes and then place pan on wire rack to cool.
Cookie Dough:
Mix butter, brown sugar, sugar, salt, and vanilla extract at with mixer at medium speed until smooth. Cut mixer speed to low and add flour. Mix just until merged. Stir in chocolate chips. Set bowl to the side.
Filling:
Beat together the cream cheese and sugar just until smooth using an electric blender. Stir in egg and vanilla extract, beating just until merged. Pour the batter into the crust. Place cookie dough by teaspoonfuls into the filling. Bake for around thirty minutes, or until firm, then place pan on wire rack to cool.
Topping:
Melt 1/3 c semisweet chocolate chips in the microwave. Augment with about 1/2 tbl of butter to smooth the chocolate. Sprinkle over the top of the cheesecake. Cool the cheesecake in pan completely, for about one hour.
Use the parchment paper as a bridge, and pull the cheesecake out of the pan. Slice the cheesecake into bars and serve.
