Pepperoni Pizza Puffs Recipe

Ingredients

  • 3/4 c flour
  • 3/4 tsp baking powder
  • 3/4 c milk (whole)
  • 1 egg, lightly beaten
  • 1 c mozzarella cheese (shredded)
  • 1 c pepperoni, cut into small cubes or presliced
  • 1/2 c pizza sauce
  • 2 tbl finely chopped fresh basil

Instructions

  • Preheat the oven to 375o, Pull out your muffin pan, preferably a 24-cup mini one and grease it with your silicone of choice (butter, Pam, etc.). Mix together the flour and baking powder in a large bowl, and then add the milk and egg. Whisk in mozzarella and pepperoni, let gel together for about ten minutes. Next, stir the batter once more and ladle into the mini-muffin pan. Bake for twenty to twenty-five minutes, or when your cups have risen and are golden. Warm the pizza sauce fully and then stir in one tablespoon of the basil. Take the rest of the basil and shower over the tops of the puffs. Serve with pizza sauce for dipping purposes.

Voila! The best part of this recipe is how quickly you can put it together and how easily you can modify to suit different tastes, you can substitute the pepperoni for other meats, and the mozzarella for other cheeses. You can even stuff these puffs with veggies, like broccoli or peppers or onions, whatever suits you! These even store well. You can freeze them for later and then reheat in the oven at 350 degrees for eight to ten minutes.
