Pepperoni Pizza Puffs Recipe

Ingredients

  • 3/4 c flour
  • 3/4 tsp baking powder
  • 3/4 c milk (whole)
  • 1 egg, lightly beaten
  • 1 c mozzarella cheese (shredded)
  • 1 c pepperoni, cut into small cubes or presliced
  • 1/2 c pizza sauce
  • 2 tbl finely chopped fresh basil

Instructions

  • Preheat the oven to 375o, Pull out your muffin pan, preferably a 24-cup mini one and grease it with your silicone of choice (butter, Pam, etc.). Mix together the flour and baking powder in a large bowl, and then add the milk and egg. Whisk in mozzarella and pepperoni, let gel together for about ten minutes. Next, stir the batter once more and ladle into the mini-muffin pan. Bake for twenty to twenty-five minutes, or when your cups have risen and are golden. Warm the pizza sauce fully and then stir in one tablespoon of the basil. Take the rest of the basil and shower over the tops of the puffs. Serve with pizza sauce for dipping purposes.
